The classic brown pub – you often find nothing more than beer and a portion of mixed food – seems to be in danger of extinction. In the last ten years, one in three cafés in Flanders closed down, approximately one per working day. Two café owners – one who is quitting and one who will open a pub in October – talk. “Profit margins on drinks are under pressure, I know, so I didn’t want to be tied to a brewery.”
