A fried egg, a boiled egg, a pancake, French toast, egg salad, in short, everything with egg could be eaten in Boxtel on Saturday. It was an egg festival on the grounds of Herenboeren Wilhelminapark. But the reason for the party is less cheerful than the word ‘party’ suggests.
About 500 members are affiliated with the farm in Boxtel where they collect their vegetables, fruit and eggs every week. The eggs are currently not allowed to leave the site because bird flu has been detected in the area. The board came up with a tasty solution: “Then we will prepare and eat the 1,800 eggs we have here on the spot.”

Not only the 500 members and supporters were welcome at the Herenboeren this Saturday, but everyone who wanted an egg. And so there was a lot of baking and cooking in the open air and the plates were nicely loaded “take it especially”, says one of the amateur chefs. “There’s more than enough.”
“The Herenboeren are for organic food and against waste,” says director Sander Boleij. “We have a weekly production of 1,400 eggs from the 249 chickens that are now cooped up here due to bird flu. Our ones in Boxtel are not infected and there is nothing wrong with the eggs. The fact that the eggs are not allowed off the site is a precaution. Throwing them away is not an option for us, so we have an egg festival.”

It is expected that the eggs will be allowed to leave the site again in two weeks. “If that is not the case, we will simply hold another egg party. Because this first edition was a good one,” the board member concludes.
