Baking papers have other differences than just color.
Baking paper is distinguished by size, color or whether it is a roll or a sheet.
But one essential difference is not immediately noticeable, because it is written on the side of the package in small letters.
It’s about heat resistance. Baking papers of different brands have been tested to withstand different temperatures, typically between 150 and 250 degrees.
– In baking paper, the quality of the raw material, the fibers used and the manufacturing methods affect heat tolerance, says Fredmanin Sara Hokkanen.
He states that they do not have researched information, but according to experience, consumers are not very aware of the heat resistance of different papers.
– Consumers perceive the properties of baking paper as so-called standard, regardless of the brand. In fact, there are differences in paper quality, which is reflected in the “performance” in the kitchen, Hokkanen says.

According to him, the most common problem with baking paper is that the paper hits the oven resistors.
Often at home, the same baking paper is used several times. Hokkanen reminds that once used baking paper may no longer withstand the same kind of heat as the package promises.
We decided to test what happens to paper with a lower heat tolerance at 250 degrees. The test baking paper was bought from the Normal store, but for example the Coop baking paper from the S group has the same temperature recommendation.
