The answer is surprisingly positive: mustard contains compounds known as glucosinolates that offer various health benefits.

One particularly intriguing point is a 2016 study highlighting various potential properties of sinigrin, the primary glucosinolate found in brown and black mustard. These properties may include anti-cancer effects, antibacterial and antioxidant qualities, as well as promoting wound healing.

Researchers in Freiburg also discovered that mustard oils can protect cells from processes that are crucial for cancer development.

Risks You Should Know

Despite numerous benefits, there are also some drawbacks. Mustard contains the fatty acid erucic acid, which can strain the heart in high amounts. The German Federal Office for Consumer Protection in Saxony-Anhalt reported in 2024 that some samples contained more than half of the tolerable daily limit in just one serving.

Furthermore, bisphenol F may form during production—a substance that may have hormone-like effects. However, the Federal Institute for Risk Assessment deems the health risk as unlikely.

How to Best Enjoy Mustard

For those who tolerate mustard well, experts suggest consuming it daily. It’s best to choose varieties that have low sugar content and a high mustard seed percentage. Importantly, mustard should be eaten cold since heat destroys most of the beneficial mustard oils.

Organic mustard is especially recommended, as conventional products may contain pesticide residues. Allergy sufferers should be cautious: mustard can trigger severe allergic reactions.
