The idiosyncratic chef had a restaurant in a fisherman’s cottage in Koksijde for ten years and even received a Michelin star two years ago.

On September 8, Willem Hiele’s new restaurant in Oudenburg opened its doors. Not a picturesque fisherman’s cottage but a monumental villa in the polders, the former home of businessman Rudolf Vanmoerke. “I arrived here one day and I was immediately sold. Here I can think more broadly, I am not limited with all the people who live around me,” says Willem Hiele.

Time for renewal

Customers will mainly be able to taste what the polders and the sea have to offer here.

Hiele still works exclusively with North Sea fish. But a lot of effort has also been put into innovation. “I think we want to go a lot more to the essence of the product, we try to stay much closer to the product.”
