The tradition on many farms of slaughtering a pig or cow at home in November to build up a winter supply of meat has been forgotten. “Consumers only see a live pig on TV,” grumble butchers. That is why this autumn the memory of the ancient home slaughter and the associated ‘fat priests’ will be revived in the East of the Netherlands.
