Eight years ago, in the home kitchens of Finns, potatoes and sausages were stacked on top of each other in a baking dish.
There was a real nickarinvuoka boom going on. It was started by a home cook Anneli Leinowho had found the recipe for nikkarinvuo in a decades-old recipe card and now posted it on social media.
In no time, everyone seemed to be cooking nikkarinvuoka, and the search term quickly rose to the most searched lists of Kotikoki, Finland’s largest recipe service.
Over the years, many have forgotten the existence of a clever everyday food, so now is a good time to refresh your memory.
Nikkarinvuoka is a simple dish made from inexpensive ingredients: potato, sausage and tomato. The ingredients are layered in the baking dish, cream and grated cheese are added and the oven is left to do the rest.

Liquor bowl
5–6 boiled potatoes
jogging sausage
2-3 tomatoes
1 onion
2.5 dl cooking cream
2 eggs
salt
grated cheese
1. Slice all the ingredients and layer potato, sausage, tomato and onion in a pan as shown in the picture.
2. Pour the broth on top and put grated cheese on top.
3. Bake at 200 degrees for about 30 minutes.
