Food influencer and home economics teacher Kati Ostrobothnia developed a Mediterranean vegetable pan, which is the perfect food for a frosty day. As the name suggests, the vegetable pan contains plenty of vegetables that are stewed until ripe in dry apple cider.

Ostrobothnia’s recipe has garnered a lot of praise on social media.

Ostrobothnia says that a vegetable pan is an easy way to add vegetables to the diet.

– The recipe, with its ease and taste, works as food as it is. The crowning glory is that the ingredients are domestic, even though the spices are from the Mediterranean.

If desired, you can also add, for example, carrot and celery to the Mediterranean vegetable pan. Beans can be replaced with, for example, peas or lentils.

– My food philosophy is to prepare easy and tasty everyday food from domestic ingredients as much as possible. If domestic is not available, I aim for European raw materials. Spices bring an international flavor to my dishes, although Finnish fresh herbs also bring wonderful flavors to the dishes, says the food influencer who shares his recipes on his Instagram account Katipohjanmaa.

Kat’s Mediterranean vegetable pan

2 potatoes cubed

¼ piece musk gourd, diced

2 red peppers, sliced

4 cloves of garlic, cut in half

1 pc bean mix

1 tsp (0.33 l) dry apple cider

1 tablespoon of smoked paprika powder

Salt

Black pepper

1 piece of burrata (homemade cheese is an excellent domestic alternative to burrata)

1. Put all the ingredients in a pan.

2. Pour over the cider.

3. Let the ingredients slowly cook in the pan for about half an hour.

4. Check the taste and add salt and black pepper if necessary.

5. Open the burrata on top and finish the meal with herbs.

6. Enjoy, for example, with fresh bread.
