– At Christmas time, a lot of food is prepared and it’s a shame that some of it ends up wasted. Christmas leftovers can easily be used to make new, tasty dishes, he says Torsti UotilaScandic’s product development manager.

According to Uotila, fish temptation is one of the best recycled dishes after Christmas.

– You can put many of the ingredients left over from Christmas feasting into the temptation. For this recipe I have used graavi fish and Aura cheese. The potato can be strips made from a whole potato or alternatively frozen potato strips with or without onion, Uotila advises on Scandic’s website.

You can saute strips of fresh potato and leek in a pan and season with salt and pepper.

Here are Uotila’s four tips on how to avoid Christmas food waste:

1. Graavikala is excellent for temptation instead of anchovies.

2. Rice porridge can be made into a sweet dessert by adding whipped cream, berries, jam or even crushed gingerbread.

3. Ham can be made into a tasty pasta carbonara

4. In addition to a couple of basic ingredients, you can make tasty fish steaks and tartar sauce from leftover smoked fish, boiled potatoes, cream cheese or sour cream.

Fish temptation for four people

approx. 400 g potato strips

approx. 90 g of leek

200 g of graavi fish, cold-smoked fish or smoked fish

30 g of blue cheese

350 g cream

1 teaspoon of salt

¼ teaspoon pepper

20 g of dill

1. Put potato, fish and cheese crumbles in layers in a baking dish.

2. Repeat this twice, pour the cream on top and cook in the oven at 200 degrees for about 1 hour until the potatoes are cooked.

3. Offer pickled cucumber and beetroot cubes as a side dish.

Fish patties

(for four)

400 g of ripe potato

300 g of smoked fish

dill

1 egg

salt

pepper

rapeseed oil

1. For fish patties, you can use the potatoes left over from the Christmas table, smoked fish, grayling fish and cold-smoked fish.

2. Peel and grate the ripe potatoes into a coarse grater. Mix in the chopped smoked fish, spices and egg. Mix the mass until smooth.

3. Form small steaks and fry until nicely browned in a butter-oil mixture in a pan.

Tartar sauce

1 dl mayonnaise

2 dl creme fraiche

1 egg

1 dl pickled cucumber cubes

dill

1 tsp mustard

salt

pepper

roe or caviar if there is any left

1. Combine creme fraiche and mayonnaise, add diced eggs and pickled cucumber and chopped dill.

2. Season with salt and pepper and finish with roe or caviar. Serve the fish steaks with a fresh salad and tartar sauce.
