Inexpensive, easy and delicious sweet potato casserole

Sweet potatoes and lentils become a delicious dish in the oven.

Roots should be used in cooking, especially in autumn.

In addition to the sweet potato, the dish has cauliflower and red lentils. The crisp cauliflower balances the soft sweet potato.

Sweet potato casserole

(for 4 people)

600 g sweet potatoes

300 g of cauliflower

1.5 dl of red lentils

1 large yellow onion

2 dl cooking cream

2 dl of water

1 vegetable stock cube

3 cloves of garlic

salt

black pepper

60 g of grated cheese

chili flakes, chili powder or a pinch of cayenne pepper (whatever you happen to find in the cupboard)

1. Peel the sweet potatoes and slice them into thin slices with a mandoline. Also slice the onion. Rinse the cauliflower and cut it vertically into slices.

2. Mix the cooking cream and water, grate the vegetable stock cube and garlic cloves into the mixture and, if you wish, add a little bit of chili powder to the mixture.

3. Place a layer of sweet potato slices on the bottom of a small (approx. 18 x 28) baking dish, sprinkle salt on top and grind black pepper on top. Pour over half of the lentils. Place half of the cauliflower, onion slices and cheese on top of the lentils. Fill the pan to the end by adding another layer of sweet potatoes, lentils, etc. Make the last layer of sweet potato slices. Remember to salt and pepper the sweet potatoes.

4. Pour the seasoned cream-water mixture into the pan and cook the pan in a 200-degree oven first under foil for 45 minutes and 15 minutes without foil. Let the moment recede and enjoy.
