Guillermo Calabrese: the doctor who did not go for the love of cooking

The main reference of the television cycle “Argentine cooks”, Guillermo Calabrese, passed away at the age of 61 this morning from cardiorespiratory arrest. The chef had suffered a decompensation on Wednesday night at his home and had been admitted to the Fernández Hospital. However, in the early hours of Friday, he lost his life.

“Creek”, nickname derived from his last name, he was born into a family with Sicilian roots, He was a medical student until, at the age of 25, he dropped out. He approached the famous chef cat dumas to ask him to be his disciple since there were practically no culinary schools and the prestigious chef accepted. He started as a cleaner in one of his restaurants, until he became head chef, in just three years. Later, his knowledge, experience, and teaching ability allowed him to participate in multiple programs on the small screen, some with his mentor.

After his departure from the classic “Argentinian chefs”around September 2020, he returned to open television, as the new host of the magazine “what a morning” by The Nine. “With Gato Dumas in 1997 we were already on this channel. Later I had the chance to be on all of them. But to meet people from that time again. The truth is that it is a wonderful group of people,” recalled the cook in dialogue with NEWS.

“I have a lot of fun spreading gastronomy, making it easy for the public. I even did it on the radio, which is almost Kafkaesque; so, imagine, communicating again on open television is very gratifying. The fundamental criterion is to count all the modifications or substitutions that could be made with the ingredients used. But I do not stop making salmon, although I make it clear that it could be replaced by haddock, sole, trout or a river fish ”, declared the chef about his didactic dynamics in the media.

Culinary pedagogy was a hallmark in the life of Guillermo Calabrese. In 1998, together with dumas catfounded the Gato Dumas College of Gastronomy. Currently, that same entity has acquired the status of an Institute and has several offices throughout Argentina: Buenos Aires, Rosario and Pilar. As well as in South America, in Montevideo, Bogotá and Barranquilla.
