Ham will soon be fried again in numerous Finnish homes. But how to bake ham? We put together detailed advice for roasting ham. With these instructions, you will get the perfect Christmas ham.
1. Bring to room temperature
When the ham has thawed in the refrigerator, let it sit at room temperature until the internal temperature is around 8-10 degrees. Heating up the ham takes about an hour per kilogram of weight.
2. Bake at 100–120 degrees
Remove the ham from its packaging and wipe the surface with a paper towel. Place the ham, skin side up, on the rack on top of the baking tray. Add a little water to the baking sheet. Insert the meat probe into the thickest part, but be careful not to touch the bone. First bake the ham for an hour at 200 degrees and then drop the oven temperature to 100-120 degrees. Ham can dry out in an oven that is too hot.
3. Monitor the internal temperature
Bake the ham at 75–80 degrees. When the internal temperature of the ham is 75 degrees, the ham is juicy. You get tender ham when the internal temperature is 80 degrees. Ham is very overcooked and tender at 85 degrees. Take into account that the temperature of the ham will still rise a little after you take it out of the oven.
4. Remove the mesh and leather
Take the ham out of the oven and let it cool for a while. Then remove any mesh and skin from the ham and, if desired, fat. Glaze the ham.
Pistachio glaze for Christmas ham
200 g of pistachios
50 g grated parmesan cheese
100 g of peanut butter
1 pot of parsley leaves
2 tablespoons of maple syrup or household syrup
1 egg
1 teaspoon of salt
Take the cooked ham out of the oven and cool it for a while to make it easier to remove the skin and, if necessary, excess fat.
Roast the pistachios in the oven at 160 degrees for 8-12 minutes. Grind the roasted nuts finely, add Parmesan and chopped parsley and mix.
Measure the nut butter, syrup, egg and salt in another container. Mix until smooth and add the nuts just before frosting the ham.
Spread the mixture over the ham by hand and roast in a 200-degree oven for 10-15 minutes until the color is nicely brown. You should watch the frosting, as the frosting may burn easily.
