Japanese cabbage salad with apple and sesame dressing

approx. 500 g of white or cabbage in thin strips

2 green apples

Sesame dressing:

3 tablespoons roasted white sesame seeds (ground in a mortar)

2 tablespoons of Japanese mayonnaise (e.g. Kewpie)

2 tablespoons of rice vinegar

1.5 tablespoons of soy sauce

2 teaspoons of sugar

0.5 tsp mirin

0.5 tsp roasted sesame oil

1. Remove the outer leaves of the cabbage and split the cabbage. Cut or plan into thin strips.

2. Wash the apples, remove the cores and grate the apples into a coarse grater.

3. Mix the grated apple into the cabbage.

4. Grind the roasted sesame seeds in a mortar and mix all the sauce ingredients together.

5. Combine the coleslaw and dressing, mix thoroughly. Garnish with sesame seeds.
