The potato is one of the pillars of food security in Finland. The strength of the potato can be seen in our everyday life.

MTK’s bulletin lists that the self-sufficiency of the potato is high and it can be stored for a long time. Potatoes are available all year round in both large and small grocery stores. In addition, thanks to its mild taste, the potato lends itself to many types of food.

A Finn eats an estimated 65 kilos of potatoes a year. Only about 20 meters of potato beds are needed to produce the quantity.

The potato is lactose-free and gluten-free, and has no fat or cholesterol.

– Potatoes are also suitable for baking. The potato binds moisture and preserves the freshness and good taste of the rolls and breads for longer, says MTK’s food market expert Heidi Siivonen in the bulletin.

In the new nutritional recommendations, potatoes are recommended to be eaten both from the point of view of nutrition and the climate.

– The potato is an excellent domestic source of carbohydrates, which also provides many nutrients, such as vitamin C, group B vitamins, potassium, magnesium and fiber, Siivonen lists in the announcement.

4 potatoes

2 large carrots

1 large parsnip

1 large lantu

1 large onion

2 cloves of garlic

a few sprigs of fresh rosemary

2 teaspoons of salt

1 tsp black pepper

2 ½ dl cooking cream

150 g of domestic Emmental cheese, grated

1. Wash the potatoes carefully and cut them into strips.

2. Peel and slice the carrots, parsnips and fennel.

3. Peel and slice the onion and chop the garlic cloves.

4. Remove the rosemary leaves from the stems and chop them.

5. Put all the vegetables in a baking dish and season with salt and black pepper.

6. Sprinkle about half of the grated cheese on top and mix lightly.

7. Pour the cooking cream evenly over the pan.

8. Bake the temptation in a 200-degree oven for 45 minutes.

9. Add the rest of the cheese on top and continue baking for another 15 minutes until the roots are soft and the surface is a beautiful golden brown.
