The May Day donut is a delicacy that is hard to resist. Chef Henri Alen advises a little trick that, according to him, gives the donut an even better taste.
– Try flavoring sugar for doughnuts. My favorites are fennel and mesian sugar, says Álén.
Mesianervo sugar requires a little more work, but fennel sugar is even easier. To succeed, all you have to do is open a bag of dry spices.
Mix desi sugar with one teaspoon of fennel spice. Then just roll the donuts in sugar.
Alén himself roasts whole fennel seeds in a dry pan, grinds them, dries them and mixes them with sugar.
– This is a quick May Day tip. A donut flavored with fennel sugar with meringue is damn good. Good luck, Alén praises.
