Zucchini salad with cod and seaweed
- 2 smaller zucchini (if you can find them with flour!)
- Possibly some seaweed (often found in the ecological supermarket!)
- A tablespoon of soy sauce
- a few sprigs of mint or lemon thyme/other soft green herbs
- Piece of cod
- paprika powder
- salt and pepper
Cut off a small piece from the ends of the zucchini, where the stem was and the last point at the bottom. Then cut the zucchini into strips with the peeler. The core is the least tasty, so cut mainly from the sides. Place this in a bowl and pour the soy sauce over it. Finely chop the herbs and add. Set aside.
Depending on the seaweed, you could fry this for a while.
Then salt the cod, just a little salt on all sides. Then fry the fish in a non-stick pan with a dash of oil until it has some color on the outside and is just cooked through on the inside.
Place the zucchini lettuce on the plate, with some seaweed if you have it, a piece of fish on top and finish with the paprika powder and possibly a zucchini flower. Enjoy your meal!
