Dirk Syx has more than 20 varieties of grapes in his vineyard. So he makes a lot of wine, but the focus these days is on BelBul, which means Belgian bubbles. The grape varieties Chardonnay, Pinot Noir, Meunier thrive in Zonnebeke and to make a sparkling wine, the grapes must be less ripe. Ideally, if we see less sun in Belgium during the summer, a sparkling wine can still be made. Den Nachtegael’s BelBul is also made according to the traditional method, as they do in Champagne.
