“Just a moment, I still have to finish some things,” baker Ed Jonker is busy with flour and dough. Large refrigerators are opened and dough is weighed. The smell of fresh bread immediately makes a homely impression. There are two assistant bakers on the floor rolling dough.

In Erik Dudink’s De Krijgsman mill, baker Ed Jonker has been working with a lot of energy every morning for more than a year to produce fresh sourdough bread. With Dutch wheat, which the miller makes himself. A job that he pursues with great passion, but which he never expected to do.

More time for family, sports and friends

Two years ago, Ed was forced to say goodbye of seven branches of family-owned bakery Jonker. The baker ran several branches in the Alkmaar, Schagen and Purmerend region. The high costs, the corona period, a fire at the Schagen branchthe war in Ukraine: the problems piled up and Ed could no longer save the company.

“That was a sad period,” Ed reflects. That is why all branches closed their doors permanently in December 2022. A month that would normally have been the busiest month of the year for Ed. Suddenly he was at home.
