Creamy Tuscan salmon is delicious on a cold winter day.

Tuscan salmon brings a wonderful change to the familiar baked salmon. Creamy Tuscan salmon is the perfect comfort food, and it’s perfect to serve with potatoes, rice or pasta. Try serving salmon also with light, crusty bread.

Salmon made in the Tuscan way is not stewed only in a cream sauce, but the sauce is flavored with sun-dried tomatoes, cherry tomatoes and spinach. Salmon food is quite easy to prepare, as it is prepared in one pan.

As salmon in this dish, you can use either Norwegian salmon or domestic rainbow salmon. In the new nutritional recommendations, it is recommended to eat 300-450 grams of fish per week, and 200 grams of this should be fatty fish, for example domestic rainbow trout. It is good to eat a variety of fish species.

Tuscan salmon (for two)

400 g of salmon or rainbow trout

Olive oil for frying

1 onion

1 clove of garlic

2 tablespoons of fresh parsley

1 dl of sun-dried tomatoes in strips

250 g cherry tomatoes

2.5 dl cooking cream

Juice of half a lemon

0.5 dl parmesan chips

100 g of baby spinach

Salt

Black pepper

1. Fry the salmon fillets in a pan until cooked. Transfer them to a plate to wait.

2. Add olive oil, chopped onion, garlic and parsley and sun-dried tomatoes to the pan and let it fry for a while on medium heat.

3. Add the cherry tomatoes to the pan and continue frying on medium heat for a couple of minutes.

4. Add cream, parmesan and lemon juice to the pan. Season with salt and pepper. Let it boil.

5. Finally, add the rinsed baby spinach and stir until the spinach softens.

6. Add the salmon fillets back to the pan before serving.

7. Serve with rice, boiled potatoes or crusty bread.

Bake properly

Fry the salmon fillet in the pan first, skin side down, for 2-3 minutes, depending on the thickness of the fillet. Then turn the fillet. If the skin does not seem to come off the pan easily, continue frying for a while longer. Reduce the heat on the stove after turning and fry the fillet on the other side for a couple of minutes.
