Nauvo’s archipelago bread is the perfect choice for the Christmas table, as it goes well with a variety of Christmas fish, such as grayling salmon, smoked fish or herring and herring. Slices of ham or turkey also taste perfect on island bread without forgetting, for example, roe or salmon mousse.

The unique taste of the island bread comes from malted malt and syrup. Traditional Nauvo island bread is made with buttermilk.

The sweet, malty island bread is the perfect food gift for Christmas, because it stays good for up to a week and is easy to wrap beautifully in, for example, butter paper or cellophane and decorate with a pretty ribbon. For example, you can slip a conifer branch under the tape.

Whether you’re giving bread as a gift or not, it’s a good idea to bake bread well in advance of Christmas. The taste of island bread improves when it is allowed to stand for a few days before serving. Store the bread covered in the refrigerator.

Remember

Do not heat the buttermilk too hot, so that the bread does not sag in the middle.

Nauvo’s archipelago bread

1 l buttermilk

75 g fresh yeast

3 dl dark syrup

3 dl of malted malt

3 dl wheat bran

3 dl rye flour

1 tablespoon of salt

10 dl wheat flour

1. Heat the buttermilk to hand temperature. Do not overheat, otherwise the result will be soggy bread.

2. Mix in crumbled yeast, syrup, malted barley, wheat bran, rye flour, salt and wheat flour. Raise under a cloth for 30 minutes.

3. Grease two oblong bread pans (capacity 2 liters). Divide the dough into the pans.

4. Bake the island breads on the lowest shelf level of the oven at 175 degrees for 2 hours. When the breads have been baked for 1.5 hours, brush them with a warm water-syrup solution.

5. Put the cooked bread on a wire rack to cool and cover with a cloth. The bread will keep under the cloth for about a week.
