– Here is another tongue-in-cheek recipe, where two cheap ingredients, potato and onion, play the main role. And ten makes a hearty meal for four people, Moilanen writes.
He reminds us that a stuffed baked potato differs from a baked potato in that it is baked twice.
When the baked potato is cooked, the inside of the potato is scooped out, seasoned and spooned back into the potato skin.
Then light heating and the stuffed baked potato is ready.
Baked potatoes filled with caramelized onions
(for 4 people)
4 large baked potatoes (e.g. Rosamunda)
500 g of yellow onions
25 g of butter
4 tablespoons of parsley
75 g of grated cheese
3 tablespoons of sour cream
1-1/2 teaspoons of salt
a couple of grinds of black pepper
cayenne pepper or paprika powder
1. Wash the potatoes, poke holes in the skin with a fork and cook in a 200-degree oven for about an hour until the potatoes are cooked.
2. Scoop out the inside of the potato with a spoon, leaving half a centimeter of the potato stuck to the skin.
3. Prepare the caramelized onion while the potatoes are cooking. Peel and slice the onions into thin rings. Melt the butter in a pan and pour the onions into the pan. Let it fry for a while, add 3/4 dl of water and put the foil over the onions. Let it cook under the foil on low heat until the onions are caramelized. Stir when the basics turn brown.
4. Mash the insides of the potato in a bowl with a fork. Add caramelized onion, grated cheese, parsley, sour cream, black pepper and salt. Mix lightly, taste the flavor and spoon the mixture into the potato skin. Potatoes can be on their hands. Sprinkle grated cheese and a pinch of cayenne pepper or paprika on the surface of the potato.
5. Gratinate in a 225-degree oven for about 10 minutes, until the cheese is slightly browned.
