Recent research from Uppsala University in Sweden has revealed alarming insights about the coffee brewed in office machines, raising concerns about their potential effects on heart health. In the study, caffeinated offerings from 14 different coffee machines found in hospitals and nursing homes were analyzed, specifically focusing on two types: “brewing machines” and machines utilizing liquid coffee concentrate.

The Culprit: Cafestol and Kahweol

The results of the study indicate that the brewing machines produced coffee with significantly higher levels of Cafestol and Kahweol, which are classified as diterpenes. These compounds can indirectly elevate harmful LDL cholesterol levels, consequently increasing the risk of cardiovascular diseases.

In stark contrast, conventional filtered coffee contains less than one-hundredth of these diterpene compounds. The absence of a fine filter in brewing machines allows for more diterpenes to be transferred into the drink, particularly those bound to coffee particles. Interestingly, coffee brewed manually in boiling water presents even higher Cafestol levels compared to what brewing machines yield. However, employing synthetic filters largely eliminates Cafestol from the final product.

Comparative Impacts

The findings suggest that coffee from brewing machines can impact cholesterol levels similarly to adding 60 milliliters of cream to a cup of filtered coffee. Such quantities are adequate to significantly affect cardiovascular risk factors. David Iggman, the lead researcher, emphasizes the preference for filtered coffee for those who consume large amounts daily.

Conflicting Evidence

The relationship between coffee filters and diterpenes has long been established. A Norwegian study conducted in 2020 found that unfiltered coffee is associated with higher mortality rates compared to filtered versions. The Swedish research specifically examined workplace coffee consumption—where individuals tend to drink more than at home. Although previous findings have largely been reaffirmed, some results are puzzling. For instance, both French presses and percolators scored surprisingly well in terms of diterpene content despite lacking fine filters. Additionally, espresso samples varied dramatically in diterpene levels, with differences almost 70-fold.

Data Limitations and Future Research

It’s crucial to note that the authors of the study openly acknowledged the gaps in their data. Variability in diterpene concentrations across different machines and within sample intervals posed challenges. Factors such as machine cleaning intervals might have an influence, along with the small sample size and insufficient details regarding machine construction, water pressure, temperature, and grind levels.

The complexity of diterpenes does not end here; they exert a dual influence on human health. While they negatively affect not only cholesterol but also other lipoproteins like triglycerides, they also possess anti-inflammatory and anti-cancer properties. Thus, further studies will undoubtedly continue to explore the multifaceted effects of coffee on health.
