The convenience of pre-baked rolls, especially with grains and seeds, makes them a popular breakfast choice. However, a recent study by Öko-Test has revealed startling results regarding the quality of these products. In their analysis of 36 grain rolls, Öko-Test identified significant concerns, particularly for gluten-free varieties.

In May 2025, Öko-Test rigorously examined a selection of 36 grain bakery rolls, which included 17 organic options, seven gluten-free variants, and four frozen products. The prices for these rolls varied considerably, ranging from €0.16 to €1.12 each.
Key Findings: High Quality vs. Poor Performance
On a positive note, more than a third of the tested rolls earned the top rating of “very good,” with many budget-friendly options from discount chains like Aldi and Lidl standing out. Overall, about half of the products received ratings of “good” or “very good.”
However, several products were flagged for extremely high pesticide levels. According to Öko-Test’s criteria, any product testing positive for two or more pesticides received lower scores, leading to six products being categorized as “poor” or “insufficient.”
Gluten-Free Products: A Serious Concern
A particular area of concern is the gluten-free rolls. Three specific brands were found to contain a breakdown product of the potentially carcinogenic antifungal agent Captan. In addition, these rolls also featured saturated mineral oil hydrocarbons (MOSH). The following gluten-free products received a disappointing “insufficient” rating:

- K-Free Seed Roll (Kaufland); Price: €0.55 each
- Schär Gluten-Free Multigrain Roll; Price: €0.71 each
Moreover, one additional product was marked as “insufficient” due to an elevated glyphosate content, an herbicide that remains controversial despite receiving a ten-year extension of its EU approval in early 2024. Two other products also fell short, receiving ratings of “poor.”
Understanding MOSH: What Consumers Should Know
Saturated mineral oil hydrocarbons (MOSH) are chemical compounds predominantly derived from petroleum. These substances can inadvertently enter the food chain, often due to residues from lubricating oils used in harvesting machines or production facilities.
The European Food Safety Authority (EFSA) has warned that MOSH can accumulate in human tissues, particularly in the liver, spleen, and lymphatic system. Thus, their contents should be minimized following the ALARA principle (“As Low As Reasonably Achievable”).
Other Considerations: Salt Content and Ingredient Lists
While not as alarming, some products received scrutiny for having a salt content exceeding 1.2 grams per 100 grams. This threshold is significant enough that it warrants warning labels in countries like Finland.
Öko-Test also emphasizes the importance of short ingredient lists. Many manufacturers use artificial flavors, coloring agents like barley malt extract or caramel powder, and phosphates as leavening agents. Consuming high amounts of phosphates is particularly concerning for individuals with kidney issues.
