Star chef Sidney Schutte (49) starts new restaurant The Gym in The College Hotel: ‘Top segment is changing’

Two-star chef Sidney Schutte (49) is starting a new adventure: around September he will open restaurant The Gym at The College Hotel in Amsterdam. He is not chasing a star, but wants to prepare pure, more accessible à la carte dishes for a wider audience: “The top segment is changing, that’s why I want to make a switch.”
