Blaauwbroek and his father decided to pick up a salad every week and taste it and then recreate it as best they could. When the iconic business officially closed its doors in 2019, the catering entrepreneur from Coevorden decided to pursue his passion and dive into the world of salads. “After a lot of fiddling, sparring and trying, we managed it. I can now say with 99 percent certainty that I have copied the old-fashioned Coevorder recipe.”
