Although Lemi’s särä is one of Finnish traditional delicacies, few of us have heard of this lamb dish. It is indeed one of the specialties of the food served at the Castle’s Independence Day celebrations.
So what is it about?
Lemi srä is indeed a traditional South Karelian dish, which is prepared in a baking oven in a birch tray, or srä. It is long-braised lamb meat, typically served in the same dish with cooked potatoes and meat stock.
This lamb delicacy is one of Finland’s longest preserved recipes. It has more than a thousand years of history.
