“I look forward to this all year,” a woman says while she is patiently standing in line. According to her, the Dutch Nieuwe is more than successful: “Salt, but not too salty, soft and just perfect.”
What makes this year’s herring special? According to fish farmer Jeroen Koper from Fish stall fish from Floor in Zandvoort, the pegs are ‘nice and fat’. According to him, they have an extra big belly, because they have eaten a lot of plankton. “That gives you a nice salty taste,” he explains. Whether this is not said every year? “The butcher always says that his steak is tasty,” he laughs.
Yet not everyone is equally enthusiastic. “Nice and slippery” says a passer -by with a grin, “but I only like that in bed.”
