According to Mikkola, the essential difference between the poor and the rich is bread or bun. Poor knights are baked from French bread and rich in buns or brioss. What is common, however, is that the drought does not hurt.
– The bun must be so dry that it doesn’t even bother to dip in coffee, Mikkola describes.

Even Little Risto has sometimes spoiled the knights for an evening snack. The whipped cream was whipped on top and the jam was added to it – of course the mother made by the mother.
– Knights are my favorite. They evoke extremely nice and nostalgic memories, Mikkola reveals.

This time, Mikkola added a small Asia watch to the dose. The miso paste is incredibly well suited to the quinoa. In fact, according to Mikkola, it is suitable for everything, even for desserts.
– Ten years ago, I couldn’t have used miso paste as much as they do now. Trying to learn, so feel free to test. Miso has a strong flavor that fits well with the sweetness of the quinoa and the acidity of lime, says Mikkola.

Rich knights
2 dl of milk
2 eggs
8 bun slices
1 teaspoon vanilla sugar
3 tbsp butter
a touch of salt
1 teaspoon of cinnamon
1. Mix egg, milk, vanilla sugar and salt.
2. Dip the bun slices throughout the milk-egg mixture.
3. Bake the bun slices in butter on both sides until beautiful golden yellow.
4. Lift the knights on the plates and sprinkle with cinnamon.

70 g of sugar
75 g glucose
70 g of cream
20 g butter
50 g of white chocolate
50 g of miso -paste
1. Roast the sugar in the pan dark, add all ingredients except white chocolate and miso paste and cook for 10 minutes.
2. Take from the stove, allow to cool for a moment and mix in white chocolate and miso paste.
Lime blueberries
2 dl fresh blueberries
1 dl blueberry jam
1 lime juice and shell grater
1. Mix all ingredients.
Vanilla mascarpone
200 g mascarpone
2 dl whipped cream
1 teaspoon vanilla sugar
1 tbsp sugar
1. Combine all the ingredients.
2. Foam a light foam with an electric mixer.
