Fish Chef of the Year: Baptiste from restaurant Lin’eau in Wielsbeke

Each year, VLAM chooses a Fish of the Year in consultation with the Flemish fisheries sector, around which extra activities are organized. The aim is to make an undervalued variety more known to consumers and food professionals.

The National Catering Competition is an integral part of the ‘Fish of the Year’ campaign and was already held for the 33rd time.

Hand peeled gray shrimps

The professional jury made a pre-selection from the submitted recipes. Five finalists were selected and prepared their dish live in the demonstration kitchens of Horeca Expo on 21 November and competed for the title of ‘Fish Chef of the Year 2023’.

Baptiste Tieberghien from Wielsbeke won with a caviar from the North Sea, hand-peeled gray shrimps, celeriac and buttermilk ‘Baliehof’. Jérome Olivier from Vonk Gastrobar in Kachtem, near Izegem, was also in the final. (Read more below the photo.)

The winner of the competition went home with a trophy from artist Marc Vanhecke, a diploma, a check for 750 euros and a dinner card for two people at restaurant Hof van Cleve in Kruisem.
